Spinach Shakti was a great new way to a sneak in some power greens in our diet breakfast menu(s)....
My daughter loved the color and taste of it and so did my good Husband.
Here are the ingredients & the recipe.....
Ingredients :
2 cups of Samolina (Suji Rava)
2 cups of spinach leaves
1 inch of ginger piece.
1/2 a cup of freshly grated coconut.
3to 4 slices of serrano pepper.
1 tsp Asafoitida.
salt to taste.
3 cups of water.
Recipe :
Blend the following ingredients together .
Spinach
ginger
coconut
serrano pepper and some water just enough to blend into a smooth paste.
Put two cups of semolina in a large bowl and add the blended greens paste to it and mix well. Then add 3 cup of water and salt to taste , asafetida and mix well.Let it sit for 15 mins atleast(add more water if you feel its too thick). Now Heat a large iron pan/skillet. grease it with coconut oil. Take handful of the Spinach shakti batter and gently put in the center on the pan. Now gently press down the batter with hands carefully not touching the pan and making it into a nice round 1/2 flat dosa. (gently press and spread). Pour some more coconut oil top and after 3 to 4 mins flip and cook the other side for another 3 to 4 mins. Repeat the same procedure with the remaining batter. Offer the Spinach Shakti to Lord Krishna and honor it accepting he remenets of the Lord and feeling the real Shakti ( Power of The Lords blessing :))
