Sampurna Spinach Paratha was discovered with the idea to sneak in this wonderful protein rich greens in my baby Bhumikanya's belly. And the recipe turned out great and little Bhumi got some spinach. If you know how to make Indian flat break aka Roti/chapati/paratha, this one will be very simple and easy to make for you!... here are the ingredients and the recipe!
2 cups of wheat flour/chapati flour.
1 tbsp of corn starch.
1 tbsp of melted butter /ghee. (for a vegan recipe use coconut oil or sunflower oil)
1 tsp of salt.
1/2 tsp turmeric powder.
2 cups of fresh spinach.
1 tsp freshly grated ginger.
Pinch of asafoitida.
Recipe: In a medium size pot , boil 4 cups of water and turn off the heat. Blanch the spinach in this water for 2 mins and let it cool for 5 mins and then blend into a fine paste. Now take large bowl and put 2 cups of wheat flour/chapati flour and 1 tbsp corn starch. Then add salt, turmeric, asafotida, , grated ginger and mix well. now pour in the melted butter/ghee/coconut oil/sunflower oil. mix well.
The water that was used to blanch the spinach ,use it little by little to pour it the bowl of mixed flour and knead a nice soft dough and keep it aside for 10 mins. Then break the dough into 10 to 12 equal parts and make small balls. now roll these small balls on flat smooth surface with a rolling pen using some dry wheat flour to avoid sticking of the dough to the rolling pen or on the surface,one at a time into nice flat breads. as round as possible and not too thick.
Heat a pan on medium heat , place the rolled Roti/flat bread on the pan and bake it for 2 mins , flip it apply some ghee/oils and bake for another 3 mins , flip again and apply 1tsp ghee/oil. Let in turn slightly brown on each side. Follow the same procedure for all your flat breads/ roti.
