Recently our family is trying to avoid gluten and starch intake on daily basis. We decided to switch on to healthy eating plan where we can balance the intake of gluten and starch. Queen Kunti Quinoa Pulav recipe was a great substitute for rice and wheat. It turned out so delicious that even our little Bhumikanya (almost 5 years old) ate all her belly full and didn't ask for rice and dal!!!!!

In the image I have used tri color quinoa, but if you just want to cook one type of quinoa , the recipe will be the same and the taste as well.
Ingredients:
2 cups of Tri color quinoa.
1 tbsp of ghee(clarified butter)/coconut oil/ sunflower oil.
1 tsp cumin seeds.
1 tsp grated ginger.
5 slices of Serrano pepper.
2 dry bay leaves.
2 medium size cinnamon bark.
Pinch of turmeric and asafoetida.
Pinch of nutmeg powder and cinnamon powder.
1/2 cup finely chopped carrots.
1/2 cup finely chopped green beans

1/2 cup finely chopped cabbage.
1/2 cup finely chopped broccoli.
1/2 cup finely chopped cilantro.
1 tbsp of ghee (clarified butter)/coconut oil, sunflower oil.
Recipe : Boil 2 cups of tri color quinoa in excess water until soft and tender but not over cooked. Drain the excess water and keep side. (approximately 15 mins boiling time)
Now put a large cooking pan on heat. Add 1 tbsp of ghee (clarified butter)/coconut oil, sunflower oil. Add cumin seeds, bay leaves, cinnamon bark, slices of serrano peppers, ginger. toss all the spices for 2 mins and then add Pinch of turmeric and asafoetida. Add the chopped green beans and carrots first and cook them in the seasoning for 5 mins , then add cabbage and broccoli and cook for few more mins , then add salt and boiled quinoa , pinch of cinnamon powder and nutmeg powder and mix well. Keep tossing veggies and quinoa to mix well for next 5 mins on medium heat. then close the lid for another 3 mins on low heat. open the lid and garnish with freshly chopped cilantro.
