On a lazy day , when you don't want to do too much chopping , cutting and instead shred all the veggies and instantly put together Gobi Aloo that turns out to be the best recipe ....! This recipe is far more flavorful with very few spices and shredded veggies.
Traditionally I cut veggies in to medium large cubes and pieces , but after accidentally trying out Gajendra Gobi Aloo (where i just shred everything and put them together except the potato cubes) , this is my only recipe to make Gobi Aloo !
Here are the ingredients and the recipe.
2 cups of shredded cabbage.
1 cup of shredded cauliflower.
1 cup of shredded carrots
1/2 a cup shredded bell peppers.
1 cup of potatoes sweet potatoes/butternut squash chopped in to small cubes.
2 tbsp of sesame oil/coconut oil/ghee.
1 tsp mustard seeds.
2 tsp cumin seeds.
1 tsp asafoetida
1/2 tsp turmeric powder.
4 slices of serrano peppers.
2 tsp of coriander powder.
A pinch of cayenne pepper powder.
1/2 cup of chopped fresh cilantro.
1.Place a medium large skillet on heat. Pour 2 tbsp of sesame oil/coconut oil/ghee. To test if the oil/ghee is heated to right temperature , put few mustard seeds , and once they pop , reduce the heat to low.
2.Start adding the spices, first mustard, wait until they pop, followed by cumin seeds, pepper slices, asafetida, turmeric powder and sauté for 5 seconds and then add the potato cubes and stir fry for 5 mins and then close the lid and let it turn slightly golden brown on low heat.
3.Using the cooking spoon , try to pierce a cube of potato to test if its cooked. And if it soft and tender , now add all the shredded veggies, in the following order with interval of 3 mins. (you may increase the heat a little bit) 1.shredded cauliflower& bell peppers.2. shredded cabbage and carrots.
4.Now add salt to taste. Toss well on high heat for 5 to 8 mins. Observe veggies turning slightly tender & juicy but not overcooked , just as shown in the image. Now add the cayenne pepper powder (without garlic) and coriander power. Turn off the heat. Garnish with fresh cilantro. Serve with Indian flat bread aka Roti.
