Loving the color & flavor of Dosa Dharma Taco is much more healthier version of any kinds Dosa I have made.
With the basic principles of Ayurveda, Dosa Dharma Taco is a combination of rice and split black gram savory pancake stuffed with most healthy purple potato subji drizzled with lime and sesame seeds., which makes it complete meal for lunch or dinner.
The exotic looking yummy purple potatoes have several health benefits as well. All potatoes are naturally high in potassium, which helps regulate blood pressure. But the extra antioxidants in purple potatoes make them even more effective than other varieties of potatoes. They have a medium-starchy texture, making them versatile and suitable in most recipes that call for potatoes.

For the savory pancake aka Dosa.

Recipe for the pancake / Dosa: Wash and soak black gram & fenugreek seeds. Then add the puffed rice in the end to this and soak all together for 8 hours. Also, soak the rice separately for 8 hours. After 8 hours of soaking grind black gram, fenugreek, and puffed rice together into a very fine paste and grind rice a bit coarse separately. Then mix all together keeping the thick pancake batter consistency and let it ferment for 8 to 10 hours.
The natural process of fermentation that takes place in the batter is very good for your digestive system as per Ayurveda as it increases the bioavailability of nutrients and minerals present is the food. Lactic acid formed during the process of fermentation not only preserves the food but also helps promote healthy gut bacteria for healthy intestinal flora. Plus the bacteria present in the process of fermenting helps breakdown the nutritional value and help lever absorb all of it almost like a predigested food or like taking in some probiotics along with food.
After 8 to 10 hours you will see the batter raised with some bubbles. Now your batter is ready. Prepare for the gorgeous looking Purple potato subji before making the dosa. Heat the coconut oil in a medium-large skillet and add cumin seeds, asafetida, ginger, and sliced serrano peppers and saute for 3 to 5 minutes to help infuse the spices well into the oil, now add the sesame seeds and red bell peppers and saute for another 3 minutes. Then add the purple potatoes and mix well, add salt to taste, and keep mixing it until evenly hot and cooked well into the species. (approximately 5 to 8 minutes on medium heat). Turn off the heat and garnish with freshly chopped cilantro and lime juice.
Note:
1.Drizzle some extra sesame seeds on top if you like and sprinkle some cayenne pepper powder if like it to be extra hot in taste.
2. If you would like to avoid the long procedure such as waiting for 8 hrs for fermenting, you try the same recipe with Mahadev Moong Dosa as well.
Now begins the exciting part :) preparing the DoSa DHaRmA Taco.
Heat a pan and pour 1 large rounded spoon full of batter on the pan (spread it a little bit if needed) and drizzle in some coconut oil and let it bake for 3 to 5 minutes until the top part looks cooked and dry and the bottom is golden brown as seen in the image. Then put a large spoonful of Purple potato subji in the center and gently lift from the corner and fold into half as seen in the image and press gently for the stuffing to be firm and not fall out when lifting it out the pan, place it on a large plate and garnish with some extra cilantro and desired spices as you like. Offer it to the Supreme Soul, Primeval Lord Krishna, and nourish your soul.
