So here is a thoughtful & mindful Recipe and Ingredients for Cucumber Dosa !
Ingredients :
2 medium size cucumbers.
2 cups of Semolina.
1/2 a cup freshly grated coconut/dry coconut powder.
1/2 cup freshly chopped cilantro.
1/2 cup chopped Indian curry leaves.
1 tsp asafetida.
1 tbsp virgin coconut oil.
Salt to taste.
Recipe : In a large mixing bowl shred the cucumbers and add salt, asafetida, grated coconut and cover with a lid , keep aside for 20 minutes. Salt will allow the cucumbers to release all the flavorful cucumber juice which will be the base for all the remaining ingredients. after 2o minutes add all the remaining ingredients and mix well. (add water if needed)
Now place a medium large skillet on heat. After 5 to 8 minutes pour 2 tsp of coconut oil and wipe/spread evenly all over the pan. Your pan is ready to make the cucumber dosas. Now take handful of batter as shown in the image above and place in the center of the pan, then spread it evenly, pressing down on the pan with your hand gently making a 1/2 inch thick dosa. Let it bake for 3 to 5 minutes by pouring 1 tsp coconut oil on the top side and then flip it down to bake the other side, both the sides should turn golden brown as shown in the image. Repeat the procedure for as many dosas you would like to make. Serve with Purple Chutney or Tomato Mint Chutney .
