Look at these gorgeous “Oats Carob Banana Muffins “ made by earthly touch of Bhumikanya’ s hands. Very easy and simple recipe any 6-7 year old can make with very little assistance.
You will need:
2 medium size over ripe bananas
1 and 1/2 cup homemade whole milk yogurt
1 and 1/2 cup of Turbinado Raw Sugar
5 drops of fresh lemon juice
2 cups of old fashioned rolled oats
1/2 cup carob powder
1 tablespoon of flax seeds flour
2 teaspoon of tapioca flour
White poppy seeds to drizzle on as as needed.
1 teaspoon of baking powder ( Aluminum free)
3/4 teaspoon of baking soda
Preheat the oven at 375 F.
Peel and mash the bananas with 5 drops of lemon juice using a fork, add the yogurt and whisk well until well incorporated. Add the turbinado raw sugar and whisk again until well incorporated.
Add all the remaining ingredients in a food process and process until rolled oats coarsely grinded and all the dry ingredients are well mixed. (1-2 minutes) add this dry mixture to the wet ingredients and whisk well. If batter looks too tight add some more yogurt and if it look too loose add some more oats flour and whisk. Pour into each cupcake/ muffin (grease the cups with coconut oil before pouring the batter or use a cup cake liner) baking tray molds 3/4 filled and drizzle with white poppy seeds and bake for 15 minutes. Wait for until semi cool and take them out of the tray. Ready to serve with some fresh berries and bananas. Bhumi likes to bake these for her outdoor play dates or picnics.
