Bulger Bisi Bhaat is just an healthy version of Bisi Bele Bhaat, a traditional dish in Karnataka, India. A very delicious combination of veggies, spices & pulses with a unique seasoning. Here in my recipe, I have replaced rice with organic red burger wheat. Hence it called Bulgur Bisi Bhaat. Best served as lunch or dinner.

Ingredients :
2 cup of Red Bulgur Wheat.
1/2 a cup split yellow moong beans.(moong Dal)
1/2 a cup Toor Dal /Pigeon Pea.(split)
1/2 a cup split chickpea.(Channa Dal)
1 cup freshly grated coconut/dry coconut powder.
3 tbsp Ghee (clarified butter)/coconut oil.
Handful of Tamarind soaked in warm water for 30 minutes/2 tbsp of lime juice.
2 tbsp of grated Indian Jaggery. (Raw sugar)
1/2 a cup freshly chopped cilantro.
Salt to taste.
Following vegetables 1/2 a cup each chopped.
Tomatoes, green beans, fresh green peas, carrots & potatoes.
Spices to make the Bulgur Bisi Bhaat masala.
1 tsp mustard seeds, 3 tsp cumin seeds, 2 tsp fenugreek seeds, 2 tbsp coriander seeds, 1 tsp black pepper pods,
2 inch cinnamon bark, 4 whole cloves, 2 tsp asafetida, 1 tsp chilli powder(optional), 2 tsp turmeric powder, 3 tsp paprika powder for a nice color as seen in the image.
Spices to do the seasoning.
2 tsp mustard seeds, handful of peanuts, handful of split cashew nuts, 1 tsp asafetida, handful of fresh curry leaves.
Recipe :
Wash and rinse all the pulses, bulgur and pressure cook / use a rice cooker (put the washed pulses and bulgur wheat)and cook until soft by adding all the vegetables and salt(in 8 to 10 cups of water). Mean while heat a medium size skillet and put 1 tbsp ghee/coconut oil. Then start adding the following spices with 5 seconds interval and sauté them lightly, fenugreek seeds, mustard seeds, cumin seeds, black pepper pods, cinnamon bark, cloves, coriander seeds and turn off the heat.Then add all the powdered spices. The spices should not burn or turn brown. just shightly roasted. After the spices cool down , put them in a blender with freshly grated coconut and tamarind pulp and blend into fine paste. Add water as needed. Now add this blended spices to the cooked grains and mix well. Add salt as needed. Add the jaggery and bring it boil once again. Its time for the seasoning now, heat a small skillet , pour 2 tbsp coconut oil/ghee , to check its on right temperature by putting few mustard seeds and see if they make a popping sound. Then add all the mustard seeds, nuts, asafetida and fresh curry leaves and pour it on the Bulgur Bisi Bhaat. Mix well and garnish with freshly chopped cilantro.

Tips : You can also add 1/2 cup of black eye beans if you like, just soak them overnight.
