An exotic veggie like bamboo shoots, should never be over cooked with too many spices, keep it simple, relish its real taste and wonderful chewy texture and fragrance. along with great taste it also consist of so many health benefits, very good for weight loss, help balance your cholesterol levels, and boost the immune system. They also have cancer-fighting and anti-inflammatory properties. They are heart-friendly and contain protein and very good for diabetics and heart patients.
Ingredients :
2 cups of fresh Bamboo shoots
(chop all the veggies thin and long like the bamboo shoots as seen in the above image)
1 cup of chinese long beans.
1/2 a cup of purple cabbage.
1/2 a cup of regular cabbage.
1/2 a cup of carrots.
1/2 a cup of benched almond flour.
1 tsp black pepper powder.
1 tsp grated ginger.
1 tbsp oilve oil/ almond oil/ ghee.(clarified butter)
2 tsp honey.
2 tsp lime juice freshly squeezed.
Recipe :
Heat a large skillet and pour ghee/ olive oil/almond oil. First add the bamboo shoots & Chinese long beans and stir fry for 5 mins. add little salt and continue stir frying on a high flame for 3 minutes or until you see the bamboo shoots edges turn slightly golden brown. Now add all the remaining veggies and salt, pepper powder and grated ginger, toss them well and stir fry for few more minutes. Other veggies remain raw not over cooked. Turn off the heat , add blanched almond flour, honey and lime. Offer and honor the FOOD FOR THE SOUL.
