Instant Appam. This is an instant version of south Indian dish which consist of split black gram( urad dal), rice & puffed rice soaked, grind and ferment overnight. The speciality of the dish is the pan in which it is made. The Appam pan ! (Mine came from India , you may try finding it at your local indian store or online). I wanted to try an instant recipe which turned out great in taste with added veggies and spices!!!!!
So the recipe and ingredients are as follows.
Ingredients :
Samolina (rava) 2 cups.
yogurt 1 and 1/2 cup.
2 cups of warm water.
1/2 cup of freshly grated coconut /dry coconut powder.
2 tsp ENO fruit salt.
For seasoning : 1 tbsp coconut oil, 1 tsp mustard seeds, 2 tsp split black gram(urad dal) , 3 to 4 slices of Serrano paper/chilli pepper, 5 curry leaves, pinch of asafoetida.
half a cup of the following veggies grated /finely chopped.
1/2 a cup carrots.
1/2 a cup bell peppers.
1/2 a cabbage.
1/2 a cup cilantro.
Recipe: Take a large bowl and soak the semolina (rava) in yogurt and warm water, whisk it well and let it sit for 15 mins. Then add the veggies, grated coconut /dry coconut powder and salt to taste. Now time for seasoning. pour 1 tbsp of coconut oil in heated pan, add the mustard seeds and urad dal. Wait until all mustards seeds pop and urad dal turns golden brown.Now add 3 to 4 slices of serrano pepper and curry leaves. wait 5 seconds for the spices to cook and infuse the flavors ........in the end add the asafoetida and immediately turn off the heat and pour the seasoning in the batter.(at this point if you feel batter is too thick you may add a little water, the consistency of the batter is as same at the idly batter) now add the ENO fruit salt. and mix well.
Now its time to make the Appams. Heat the Appam pan and grease it well with coconut oil. Pour the batter unto half of each little cup of the appam pan. Wait for 3 mins for it to cook on one site and then gently turn it upside down very slowly. If he it cooked well on the bottom side , it will be very easy to flip and it will not break apart and you get a perfect round Appam. :)
And food for the soul be offered to the supreme soul , the Primeval Lord Krishna and the remnants are the blessing to purify our mind , body and soul!!!!
